Crockpot Mango Coconut Chicken

This is one of the go-to recipes in my house; its easy to make and taste oh-so-good. It is also one my husband’s favorites. In fact, just last night when I dished it up, he commented on how it reminds him of our honeymoon to Hawaii. That alone is enough for this newlywed to make the meal over and over again!

Mango Coconut Chicken

And as promised, another recipe involving rice ;-)


  • 1 Cup Frozen Mangos
  • 2 pounds Frozen Chicken breasts
  • 1 Can (15 ounces) Coconut Milk
  • ¼ to ½ Teaspoon Red Pepper Flakes (depending upon spice you like)
  • ½ Teaspoon salt
  • ¼ Teaspoon Black Pepper



  1. Toss everything into the slow cooker. Cook on LOW for 6-7 hours.
  2. Serve over jasmine rice

    Ooooh, mango and coconut are two of my absolute FAVOURITE foods – but I never would have thought of combining them with chicken! Now that I’m just starting to eat more chicken, I’ll have to try this!

    Truth be known, yesterday I had a gift voucher for a high end grocery store that I was given – and I may or may not have spent 1/4 of said gift voucher on mangoes alone ;P
