This is one of the go-to recipes in my house; its easy to make and taste oh-so-good. It is also one my husband’s favorites. In fact, just last night when I dished it up, he commented on how it reminds him of our honeymoon to Hawaii. That alone is enough for this newlywed to make the meal over and over again!
And as promised, another recipe involving rice
- 1 Cup Frozen Mangos
- 2 pounds Frozen Chicken breasts
- 1 Can (15 ounces) Coconut Milk
- ¼ to ½ Teaspoon Red Pepper Flakes (depending upon spice you like)
- ½ Teaspoon salt
- ¼ Teaspoon Black Pepper
- Toss everything into the slow cooker. Cook on LOW for 6-7 hours.
- Serve over jasmine rice
